Vegan Vanilla Glazed Banana Muffins

I am by no means a pro baker and whilst I often ogle all the gorgeous baked goods on Pinterest and Instagram, the things I make always have a very "homemade" vibe to them. Therefore, I tend to favour the more simple recipes and I have a handful on my repertoire that I crack out on the reg. As Mother's Day was yesterday, I thought I'd do a little baking on Saturday night so that my mum would wake up to some muffins on Sunday morning. I ended up whipping up a batch of banana muffins with a vanilla glaze, a recipe I've probably used about twenty times in the last year. As it's such a quick and simple recipe I thought I may as well take a few photos of my (very homemade-looking) muffins and share the recipe with you!

This recipe is based off a strawberry banana muffin recipe in a book called Ms Cupcakes Vegane Cupcakes, Cakes & Cookies by Mellissa Morgan, which contains loads of amazing recipes. I've made these cupcakes so many times that I've tweaked the recipe and changed some of the quantities and ingredients over time. So this is the end product and of all the times I've made these, this last time has given me the best result! Let's get started!

Makes 12 medium muffins
Prep time: 10 minutes
Bake time: 20-25 minutes


For the muffins

280g all purpose flour
3 tsp baking powder
1 tsp baking soda
125g sugar
1 mashed banana
175ml soy milk
150ml sunflower oil

For the glaze

50g icing sugar
2 tbsp soy milk
1/2 tsp vanilla extract


1. Pre-heat your oven to 180°C and put muffin liners in a muffin tin or a baking tray.
2. In a bowl, mash your banana with a fork until it has formed a purée.
3. In a large bowl, mix together the flour, baking powder, baking soda and sugar.
4. Once that has been mixed together, add in the mashed banana, milk and oil and mix together.
5. Distribute the mixture evenly across the muffin liners on your tin.
6. Put into the oven and bake for 20-25 minutes.
7. Whilst the muffins are cooling, start making the vanilla glaze by combining the icing sugar, soy milk and vanilla extract in a bowl.
8. Depending on your preferred consistency of the glaze, add more icing sugar or more soy milk for either a runnier or firmer glaze.
9. Once the muffins have mostly cooled, spoon the glaze over the muffins.
10. Leave the muffins to cool completely and the glaze to set for about 15 minutes.

So there we go, it's really that easy! I will also mention as a side-note that if you're more skilled than I am (not difficult) then you'll likely be able to make much more aesthetically pleasing muffins than me! Either way, these taste great and they're a great simple recipe to whip up when you feel like baking! I really hope you like these if you decide to try them! Have a lovely week!
